💡 the ONE thing holding you back in the kitchen (it’s not skill)


Dear Reader,

It may only be the second month of the new year, but it already feels like time is rushing by. Do you feel the same? Here in Trinidad, we’re already in the middle of the Carnival season, and right in the middle of this month we have Valentine’s Day (14), Carnival Monday and Tuesday (16, 17) and the start of the Lunar New Year (17), all falling rapidly after one another.

It’s a time of year when a lot of us are going to be cooking food for others, and possibly also experimenting with new recipes. And, with that, can come a little “performance anxiety”.

So can we have a real moment?

Confession: I still get nervous before trying a new recipe, especially if it’s for someone else.

But… I’ve stopped waiting for permission to experiment. I’ve also stopped needing everything to be flawless before I start.

Because here’s the truth: confidence in the kitchen isn’t about how much you’ve spent, it’s about having a clear intent.

Take a street food staple like pholourie, for example. Making pholourie at home quickly teaches restraint. You can mix the batter quickly, but the true test is waiting for the oil to reach the right temperature and letting each dumpling fry slowly until golden.

Too hasty, and you lose the texture; too slow, and the moment passes.

Having said that, don’t fret about having the perfect technique right away, or never making a mistake. Show up, trust the process and give yourself permission to learn through the doing.

You don’t need to avoid traditional recipes out of fear. You also don’t need to spend hours researching before you can begin.

You just need to start.

Allow yourself to grow messily, beautifully, confidently along the way.
